I started added spice blends to my home canned tomatoes a few years ago and have never turned back! I still do some plain too. These blends can be used for canned tomatoes or canned tomato sauce. Leftover spice blends can be used for cooking instead of store bought blends!

Here are the blends from Ball
Italian Spice Blend
Makes about 6 (32 oz) quarts or 12 (16 oz) pints, You will need:
4 tsp basil
2 tsp thyme
2-1/2 tsp oregano
1-1/2 tsp rosemary
1-1/2 tsp sage
1 tsp garlic powder
1 tsp hot pepper flakes,
optional
Add 2-1/4 tsp of spice blend to each pint jar. If omitting hot pepper flakes, use only 2 tsp.

Mexican Spice Blend
Makes about 6 (32 oz) quarts or 12 (16 oz) pints, You will need:
6 tsp chili powder
2 tsp ground cumin
2 tsp oregano
2 tsp garlic powder
2 tsp ground coriander
1-1/2 tsp seasoned salt, optional
Add 2-1/2 tsp of spice blend to each pint jar. If omitting seasoned salt, use only 2 tsp.

Cajun Spice Blend
Makes about 6 (32 oz) quarts or 12 (16 oz) pints, You will need:
3 tsp chili powder
2 tsp paprika
1-1/2 tsp onion flakes
1-1/2 tsp garlic powder
1-1/2 tsp ground allspice
1-1/2 tsp thyme
1 tsp cayenne pepper
Add 2 tsp of spice blend to each pint jar.

  2. I just seen these spice blends in my Ball book yesterday and made them up. I tried one jar of each to see if we like them. If we do than I will be making/using them again. Great timing!

  3. My tomatoes for the year are already canned. I usually do plain sauces and flavor them with cooking. I do like the spice blends and I would use them for all kinds of foods as a spice in cooking.

  4. I must give these a try, especially the Mexican blend. I must get Ball Blue book, it seems as though a lot of recipes are taken from it.

  8. I love seasoning blends, very handy. You can save a !it of money making your own.
    Up here in Winnipeg, Manitoba…. we have a store called the Bulk Barn, I love that place,
    I can get spices, seasonings, raisin, cranberries, coconut, nuts, you name it….very economic ca!
