I didn't like bitter melons and loofah gourds back in the day, and years after, I tend to enjoy textures and tastes that I were not used to.
Now, loofah gourd with moringa leaves in garlic-ginger broth and fish sauce (bulanglang) and stir fried bitter melon with egg are kind of my go-to as far as veggies go. XD
Had preferred sweets and salty stuff back then, but now, I think I can prolly eat anything as long as it's edible.
I love your content. Oddly enough, no matter how I try clams, I can't keep it down. I doubt its an allergy but I gave up trying. Keep up the great content.
I don't like olives, but every time they're offered to me I try another one, just to see if I like them. I've found one variety I like so far, but the majority are still pretty gross. But I will still keep trying!
Trying new foods is fun. I made elk for the first time last night, and it will now be in the rotation of indulgent meats for special occasions. It's expensive here.

I kept trying eggplant even though I HATE it. I can now eat it one way and only when i prepare it. But if i didn't keep trying i wouldn't find that one way.
