When I'm stressed or just need to wind down I often end up baking. It reminds me of my grandmother who taught me how to cook. She loved baking most of all and I was the one to receive all of her recipe books when she passed. Her homemade potato rolls were always my favorite so they're my go to when I need a pick me up.
Personally, I love a dish my dad makes, and whenever he does cook it, I'll get happy and look forward to eating it. The dish is called "Alho Francês á Brás" and it's a variation of a typical/traditional Portguese Codfish dish.
A Brazilian Kibe makes me so happy I am only 12 and my grandma passed away last month and when I eat them with Ketchup remind me of her and it makes me so happy
My happy food is always, always Hong Kong style macaroni soup with a fried spam piece and 2 over easy eggs, served with a side of peanut butter and condensed milk on toast.
Spam and green onion tamagoyaki onigirazu is my comfort food. Used to have it all the time during summer while school was out and I had to cook for myself
Kaiserschmarrn always takes me back to the ski hut with a hot chocolate sitting in the snow or to my austrian grandpas back yard who makes the best in the world
Cream of mushroom soups has lots of variations, but can be so easy a middle schooler can make it and is some of the best creamy liquid to bless your mouth
Escondidinho, is a Brazilian dish made with mandioca purê and grinded carne seca, that is a dried Meat with a lot of salt, with onions. It's covered with cheese, traditionally coalho cheese or canastra cheese, and damn, that makes me happy.

Food that makes me happy would be Gorditas. I love Gorditas, they are just so good and massive, the thick meat, tomatoes, lettuce, sauce, avacado, onion, and beans. Just perfection
Best comfort food has to be haleem, it's a Pakistani stew dish that has grains and meat (my favorite is usually chicken), you can also have A LOT of add ons like fried onions, cilantro/parsley, lemon, ginger slices etc. I asked for this A LOT when I was younger but since it has a long cook time we didn't have it often, but when my mom did make it, it would be the only thing I ate until it was gone.

Spanish omelet with the slightly undercooked middle is a classic comfort food for me, it’s even more delicious cold the next day
French pot au feu with some bones in it, you eat the inside of the bone on a slice of bread with flower salt 😋
