Just got back from Italy, had a bug to make a pappardelle, short rib bolognaise!

  1. Recipe was a basic mirepoix (fennel instead of celery) with chopped bacon, red wine, super reduced beef stock, 250ml passata, then the seared short rib slow cooked in a Dutch oven with the sauce until fall off the bone tender. Pasta is a simple three egg and 00 flour that I mix, roll, and hand cut to pappardelle sized noodles. Served with Parmesan
