This roasted veggie pasta sauce is creamy, flavorful and perfect for a quick weeknight meal!

Here is what you need for the sauce.

3 small zucchini chopped
2 cups cherry tomatoes
1 large red pepper or 2 small peppers sliced
1 onion sliced
4 garlic cloves not peeled
1 tbsp olive oil
1 tbsp all purpose seasoning
Salt pepper to taste

Cashew cream
1/2 cup soaked cashews in hot water for 2 hours or more. Remove water after you soak and rinse.
2/3 cup of water
1/2 lemon juice squeezed

Preheat oven to 420 F.
Line tray with parchment paper and spread all the veggies and garlic here. Season and add oil. Mix well. Roast veggies for 15 to 20 min. Let cool a little and peel the garlic off.
In the meantime make cashew cream. Add cashew to a high speed blender or food processor and blend until very smooth. Add the roasted veggies and process until creamy. Add the sauce to your favorite pasta or zucchini or cucumbers noodles. Enjoy! ❀️
