Intestines. Yet, he claims he hates and will not usually eat SPAM!
Been there a few years ago and eating in local restaurants and street stalls wasn't only delicious but also the best way to get in touch with some locals. Best food there for me: the chicken soup with rooster feet in them and the best potatoes you will ever eat.
Beef heart is really good, it's very similar to steak.
