Bob Paulinski, Master of Wine, discusses a wine aged in the sea. The stories of wines being lost at sea and recovered, then consumed years later is the inspiration of Wine of the Sea. The wines are intentionally submerged into the Adriatic for up to two years. The underwater cellars account for thousands of bottles of wine. That’s commitment! They are stored well below the surface, in complete darkness. Th retrieved bottles are covered with a dry crust of sea matter. The claim is the constant cool temp and gentle sea movement results in softer, rounder wines with character that cannot be found with traditionally aged bottles.
A special double wax capsule is used to protect the wine during storage under the sea. My thought, the wine is a good example of Amarone. Smooth, soft styled wine with the heft that’s expected from this sort of wine. I wish I had the chance to taste it up against a traditionally aged bottle for comparison. I don’t believe the hype, but this was a fun bottle to pop with a good story.
