Ingredients:
2 tablespoons extra-virgin olive oil
4 tablespoons unsalted butter
1/2 medium onion diced (about 50 grams)
4 cloves minced garlic
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes optional
Juice and zest of 1 lemon
1 cup dry white wine such as a pinot grigio
1 lb shrimp deveined and peeled
1 medium tomato, diced
1 Tablespoon grated Parmesan Cheese
Fresh parsley for garnish
Shaved Parmesan cheese for garnish
Directions:
Place the olive oil and butter in a 10″ or larger skillet over medium heat. Once hot, add in the onion and cook until soft and translucent, about 3-5 minutes.
Add in the garlic, red pepper flakes, Italian seasoning, and lemon zest and cook until garlic is fragrant, about 30 seconds.
Add in white wine and lemon juice, cook to reduce sauce by half, about 5 minutes.
Add in tomatoes and shrimp and cook until shrimp turn opaque, pink and form into a tight C shape, about 3 minutes. Season with salt and pepper to taste.
Add Grated parmesan cheese and stir to combine.
Garnish with parmesan cheese and parsley to serve.
