This dish is a twist on a classic carbonara. I’m using beans, which are so
good for the planet, and along with the Parmigiano Reggiano, make the
sauce super creamy and delicious.

Serves 2
Time: A few minutes
Course: Pasta & rice

INGREDIENTS
100g guanciale (or bacon), cut into strips
700g jar of butter beans
1 egg
40g Parmigiano Reggiano, finely grated, plus extra to serve
sea salt and black pepper

PREPARATION
1. Heat a large frying pan over a medium heat. Place the guanciale or
bacon strips into the dry pan and gently fry for 5 minutes, or until
crispy, stirring regularly.
2. Add the jar of butter beans, including their liquid (aquafaba). Bring
to the boil, then reduce to a simmer.
3. Meanwhile, beat the egg with the Parmigiano Reggiano and season
with sea salt and black pepper. When the beans are hot and saucy,
remove them from the heat and leave to rest for a few minutes before
stirring in the egg and cheese mixture.
4. Serve with more finely grated Parmigiano Reggiano and a side salad

  1. Thank you so much for this recipe! For health reasons my husband has to eat a very low carbohydrate diet. This is a perfect alternative. As we don't eat pork, I'll try this with a vegan "bacon" alternative 🥰

  2. There's a parable "Soup of stone" – a con-artists convinces their fellow-travelers that they can make a delicious soup out of stones. The starting ingredient is stones, of course, but wouldn't ie be delicious with a teensy bit of spice?
    With this "just a little-bit of…" story. the artist proceeds to 'borrow' all manner of ingredients from their fellow-travelers, and when it is time to eat the shared soup, explains that "the stones should be removed before eating the soup. A literal genius, getting ingredients for free from cohorts.

  5. You have to remember that Tom is not Italian, and like a lot of non-Italian chefs, he attempts to create something better than the convention. Of course, he fails.

  10. just tried it, a little modification but was also delicious. I know you have a contract with parm. reggiano, but i added 50% of pecorino to the parmigiano, and it did give it an outstanding flavor. Keep it up Gennaro!

  11. I make refrigerator soup. Clean out all the left over meat and veggies from the fridge put it in the soup.

    I hate that “but” but still gotta say it. But the recipe is em.. weird yet. And I’m not even Italian. Once I hear “the environment” I have that feeling of some ideology prevailing over sense.
    Besides all the other (obvious) reasons beans ARE NOT quite healthy food.
    Durum pasta is what really healthy food
