Fettuccine Pasta with Prosciutto & Peas in a Cream Sauce Recipe:
Prep Time: 10 minutes
Cooking time : 20 minutes
Servers: 4-6 people
Ingredients:
1 lb. Fettuccine Pasta
10 oz. Frozen peas
2 oz. sliced prosciutto , finely cut
1 tablespoon olive oil
1/4 cup dry white wine
1 1/2 cups heavy cream
3/4 cups of grated reggianoΒ parmesanΒ grated cheese
1/4 cup Italian parsley finely chopped
3/4 teaspoonΒ salt and pepper to taste
1 stick of unsalted butter
3 cloves of garlic, minced
Directions:
While pasta is boiling, you can prepare the cream sauce.
Set a large pan, add butter, minced garlic, olive oil, grated cheese, white wine, then cover and
saute for 2 minutes then add cut up prosciutto, cover and saute for another minute. Then add heavy cream, salt and pepper, cover and simmer for 4-5 minutes. Once the pasta is fully boiled, strain the pasta , and stir in the cream sauce, and garnish with chopped parsley.

This looks delicious! I actually tried this recipe, but my cheese came out a little curdled. Any advice how to make the cheese smooth? I think I may have over cooked the sauce. Thanks for the great recipes!!
