Today we made homemade pasta from the recipe we learned at Tuscookany Cooking School in Tuscany!

TUSCOOKANY COOKING SCHOOL’S PERFECT PASTA RECIPE!
INGREDIENTS:
400g/14 oz. TIPO OO Flour
4 eggs
2 Tbsp (30ml) Olive Oil
Pinch of salt
METHOD:
Put the flour on a clean work surface and build it up into a mound like a volcano. Making a little hole in the center. Place the eggs, olive oil and salt in the center of the hole. Bet the egg mixture with a fork, slowly incorporating the flour. When all the flour is incorporated, knead the dough. Wrap in plastic wrap and refrigerate for 1 hour. Then process through the machine according to your pasta maker instructions.

Pasta looks beautiful.
I used to do this all the time. I loved making fresh pasta. I haven’t had as much time since my baby came, but I can’t wait to make pasta with him.
I liked making fresh pasta until my son broke my roller. 🙂
I wonder, should I get a separate pasta machine or some pasta attachments for KitchenAid Stand Mixers?
