Italian Pasta Salad
INGREDIENTS
12 oz rotini pasta, cooked/rinsed
¾ cup olive oil
¼ cup red wine vinegar
½ tsp garlic powder
½ tsp oregano
1 sprig thyme, leaves only (or ½ tsp dried)
½ cup parsley, finely chopped
¼ cup basil, chopped
½ tsp salt
½ tsp pepper
8 oz salami, sliced or cubed
5 oz cherry tomatoes, halved
1 english cucumber, cubed
1 small red onion, diced
¾ cup black olives, halved
¾ cup kalamata olives, halved
10 oz mozzarella pearls
4 tbsp fresh grated parmesan cheese
INSTRUCTIONS
1. Cook the pasta according to directions to desired firmness. Rinse well and cool.
2. While that’s cooking, prepare the dressing by combining the olive oil, vinegar, garlic powder, oregano, thyme, salt & pepper. Stir and set aside.
3. Prepare the salami, tomatoes, cucumber, onion, and olives as listed above then combine them in an extra large bowl.
4. Top with the dressing and pour on the mixture, gently combine well. Then add the pasta, parmesan cheese and the mozzarella pearls. Stir again.
5. Chill for at least an hour.
