At DiPalo’s, Action is hosted by fourth generation owner, Sal DiPalo as they taste meats and cheese imported directly from producers in Italy. DiPalo’s is also know for their chicken cutlets, and while Action was waiting for them to finish cooking, he heads around the corner for a classic; a curry chicken bahn mi from the Brooke street institution. There is a huge difference between great European cheese…and American-made cheese. Parmiggiano Reggiano…or similar cheeses…are made with raw milk. In North America, they make it so damn difficult to make cheese with raw milk. In addition, there are zero chemical preservatives in the great european cheeses. They are all naturally preserved. These are important aspects of these great products. Same is true with the two best prosciuttos in the world….Prosciutto di Parma…and Prosciutto San Daniele. No nitrates or any kind of chemical preservative added. Just pork…and salt. Fabulous products. If you really love prosciutto, you gotta try both of them. North America is so void of great food products, on the whole, because people really take no pride in the creation of great products…that are also made in a very healthy manner. Everything is shortcut in North America, for the motive of quick profit…..and the best principles are thrown by the wayside.
