Potato Salad with Dill Lemon & Capers
Serves 6 to 8
1kg x New Potatoes
150g x Mayonnaise
40g Capers (Chopped)
20g x Dill (Chopped)
1 x Lemon (Zest & Juice)
1 x Shallot (Finely Sliced)
Salt and Pepper to Taste
1. Fill a pan 3/4 full with cold water and generously season with salt. Add in the potatoes whole and place over medium heat and bring to a simmer.
2. Cook the potatoes until tender (roughly 15 to 20 minutes) and then run under cold water to stop the cooking.
3. Cut the cold potatoes into random shapes and place them into a mixing bowl with the mayonnaise, lemon zest and juice, capers, dill, shallot, and a pinch of salt and pepper.
4. Mix everything together and enjoy!
