spaghetti with astice
“Spaghetti with Astice” refers to a classic Italian pasta dish made with spaghetti and lobster (astice in Italian). It is a luxurious and indulgent seafood pasta that is perfect for special occasions or a gourmet meal.
Here’s a basic recipe for Spaghetti with Astice:
Ingredients:
400g spaghetti
1-2 lobsters (live or cooked)
4 tablespoons extra-virgin olive oil
3-4 cloves of garlic, finely chopped
1 small dried chili pepper, crushed (optional for a bit of heat)
1/2 cup dry white wine
1 cup cherry tomatoes, halved
2 tablespoons tomato paste (optional, for a more intense tomato flavor)
Fresh parsley, chopped
Salt and pepper to taste
Instructions:
If you are using live lobsters, begin by preparing them. Place the lobsters in the freezer for about 20 minutes to anesthetize them slightly. Then, use a large knife to quickly and carefully cut the lobsters in half lengthwise. Remove the claws and tail, and set them aside. Alternatively, if you are using pre-cooked lobster, skip this step.
Cook the spaghetti in a large pot of salted boiling water until al dente. Drain the spaghetti, reserving a cup of pasta water, and set aside.
In a large skillet or pan, heat the olive oil over medium heat. Add the chopped garlic and chili pepper (if using) and sauté for a minute until the garlic becomes fragrant.
Add the lobster tails and claws to the skillet, and cook them for a few minutes until they are heated through. If using live lobsters, cook until the lobster meat is opaque and cooked.
Pour in the white wine and let it simmer for a couple of minutes until slightly reduced.
Add the cherry tomatoes and tomato paste (if using) to the skillet. Stir everything together, and season with salt and pepper to taste. Cook for a few more minutes until the tomatoes soften and release their juices.
Add the cooked spaghetti to the skillet and toss everything together, ensuring the pasta is well coated with the sauce. If the sauce is too thick, you can add some of the reserved pasta water to achieve the desired consistency.
Remove the skillet from the heat, sprinkle fresh chopped parsley over the top, and drizzle a bit more olive oil if desired.
Serve the Spaghetti with Astice immediately while still hot and enjoy the delicious combination of tender lobster and flavorful sauce with perfectly cooked spaghetti.
This dish is a true treat for seafood and pasta lovers alike. It pairs well with a glass of white wine and some crusty bread to complement the flavors. Buon appetito!
