  1. not my attempt at making long pasta noodles only to end up with classic fusilli i am not mad about it tho

    pasta dough:

    1 cup semolina (suji) ground up into a flour
    salt
    1/2 cup hot water (add more if needed)

    – knead the dough into a compact, non sticky dough
    – rest it covered for an hour (wrap in cling wrap if you want)
    – with the help of some more semolina, divide and roll out the dough
    – form whichever pasta shapes you like
    – cook in salted boiling water for 3 min before transferring directly to sauce
