they are entitled as if the bacteria couldn't be transfred with just one cheese and recreated somewhere else.
What is the time in Wisconsin, Farmers would go to the cheese factories pick up 5 gallon buckets a cheese curds their hogs. It was extremely cheap. Of course Farmers knew how delicious those curds were. They were safe cruise out for their old use in their family. Then everything is ruined….. the factories figured out that they’ve been selling cheese curds, the byproduct of the cheeses, per hog feed whim. It was absolutely delicious and highly desirable. They started packaging it and selling it. I some dairies eventually found that the cheese curds were more valuable than the cheese in popularity.
When I see cheese, curds, I buy them, try it, and then I cry. They’re not too bad if you deep fry them but they’re not fresh cheese curds of old. This does not mean you cannot get fresh cheese curds. For that you have to go to Wisconsin or a few select cheese houses in other states. When you find a cheese house, a sells a real cheese curd, remember where it is.
