If you’ve been following along with me, you know I’ve been testing out the GoBe3 from www.healbe.com/club for the month or so and I can genuinely say that I’ve been really loving this smart band.

Amatriciana with a little twist 🐷🧅
We love to eat this at least 1 at month and my little sous loves to cook with me 🥰
Ingredients:

14 oz (400g) bucatini pasta (or mezze maniche)
7 oz (200g) guanciale or pancetta, diced
1 medium onion,
1 can (14 oz or 400g) peeled tomatoes, crushed or puréed
1/2 teaspoon red pepper flakes (adjust to your taste)
1/2 cup (120ml) dry white wine (optional) or red
Salt, to taste
Freshly grated Pecorino Romano cheese, for serving

Instructions:

Bring a large pot of salted water to a boil. Cook the bucatini pasta according to the package instructions until al dente. Drain the pasta, reserving a cup of the cooking water.
In a large skillet or saucepan, toast an half onion until chard and remove it , then cook the diced guanciale or pancetta over medium heat until it becomes crispy and golden brown. This should take about 5-7 minutes. Remove the crispy pork from the pan, leaving the rendered fat behind.

If using white wine, pour it into the pan and let it simmer for a couple of minutes until the alcohol evaporates. This step is optional but adds a nice flavor to the sauce.
Add the tomatoes sauce to the pan and season with salt. Reduce the heat to low and let the sauce simmer for about 15-20 minutes, allowing the flavors to meld together. If the sauce becomes too thick, add a splash of the reserved pasta cooking water to loosen it.
Once the sauce has thickened and is well combined, add the cooked crispy guanciale or pancetta back to the pan, stirring it into the sauce.
Add the drained bucatini pasta to the sauce, tossing everything together until the pasta is well coated. If needed, add a bit more of the reserved pasta cooking water to loosen the sauce further.
Serve the Pasta all’Amatriciana hot, garnished with freshly grated Pecorino Romano cheese and chopped parsley.
