Hey guys! Today I am sharing an easy side dish for this Instant Pot Virtual Holiday Potluck. I’m not the only one sharing a recipe for this virtual potluck so don’t forget to check out the others in the playlist below!
Holiday Potluck Playlist –
Potato Carrot Medley
2 Tbsp extra virgin olive oil
1 onion, diced
1.5 tsp minced garlic
4 pounds potatoes, cut into bite size pieces
2 pounds baby carrots
1.5 cup vegetable broth
1 heaping tsp Italian seasoning
1 heaping tsp 21 Seasoning Salute
Parsley for garnish
Add oil to the Instant Pot. Saute onions for 5 minutes.
Add carrots and saute 5 more minutes.
Add remaining ingredients. Stir. Close lid and turn knob to sealing on the top of the Instant Pot.
Press the “manual” button and set time to 5 minutes.
Once cooking completes let the pressure release naturally for 10 minutes.
After 10 minutes, release any remaining pressure.
Dish into a serving bowl and sprinkle a little bit of fresh parsley.
