Changes I made/will make in the future:
1. The recipe called for regular diced tomatoes, but I added the fire roasted variety;
2. To make it even more seasoned, I added cilantro, garlic, parsley, and a few other seasonings. A little crushed red pepper would give it a nice kick, too!
3. A small can of tomato sauce would keep it moist
4. In the future, will try with green & sweet bell pepper slices
