  1. I’ve been an executive chef for About 13 years now. I started as a dish washer when I was 14 and just worked my way up. Dish. Prep. Line. Sous chef and chef. Never went to culinary school just had a passion for food since I was kid helping my mom cook!! So you’re exactly right. The class room can’t prepare you for the hustle and bustle in the kitchen that’s for sure

  4. Bourdain said that culinary scholl gave him technique that helped him alot when started working in the cooking industry but Also he said it could be waste of money

  5. For certain restaurants having that piece of paper will pay you more even if you think it waste of time

  6. As an German chef i totally agree. We have 3 to 1 ratio . Working 3 parts and 1 part school and I must say I didn't learn anything I'm the culinary school

  7. Very true. I worked as a chef for about 7 years, 30 years ago & working in kitchens learning on the job is the very best way.

  8. When you’re thinking about being a chef, i would think less about the food & more about the actual doing the job. Can you do long hard hours. Can you take real pressure. Can you accept being barked at like you’re in the army. Are you happy working all w/ends & the holiday seasons when others are off. To he successful-you need to live it. It can’t just be a job & it will torture you.

  11. I’m currently doing an apprenticeship and compared to the guys who do full time schooling in cheffing it’s a world of difference. Working in the kitchen definitely teaches you more than any 2 hour lesson can.

  12. The main thing that needs to change is the pretentiousness from both sides of the argument.

  13. Id honestly tell my 18 yr old self to keep doing cakes at home, to buy a French recipe book and expand your palette more

  14. I became a chef, never went to culinary school, I also agree that culinary school is a waste of time and money if you knew how to do these actions from doing culinary things like me your entire life

  15. I went to culinary school and graduated just last October. And every thing that is said in this video is accurate.
