Caciocavallo Ubriaco literally means “drunk cheese”. It’s a type of semi-hard cheese that is soaked in Primitivo wine for 30 days. Caciocavallo is a very popular cheese in southern Italy, but soaking it in wine completely changes its taste and texture and gives a truly unique cheese. I visited Masserie Amodio in Mottola, Puglia, Italy, to see how this beauty comes to life.
