Today, I am making one of my favorite cold pasta salads. This pasta salad is great as a side or a full meal. I call this a two-day pasta sakad, because it will last for two days in my house.

INGREDIENTS
12 oz rotini pasta
8 oz fresh mozzarella cheese
4.5 oz pepperoni
6 oz broccoli florets
2 medium carrots
5 oz jar artichokes
5 oz grape tomatoes
1 cucumber
2.5 oz can black olives
1/2 cup sliced peppercini
sliced red onion
1/4 cup grated parmesan cheese

DRESSING
8 fl oz Vinaigrette
2 Tbsp mayo
1 tsp Italian herb blend
1/2 crushed red pepper flakes
salt and pepper to taste

  1. The vingarette you used is made in Perrysburg Ohio. My deceased ex boyfriend went to school with Larry Croy who created it. He also ran a restaurant and had it for the salad. Try it on a salad it's wonderful. He is deceased as well as his wife and the business of the dressing was taken over by their son. It is shipped on a global stance. They were beautiful people. He closed down the restaurant around 1990. But had it for over 20 some yrs. Only served the best Angus beef from a company called Tanks Meats. No hormone feed cattle. Sometimes I make a greek salad fixing and put that dressing( make sure you shake the bottle good first ) and never throw out the liquid on the bottom of the bowl. I drink it!! Try putting it on slow cooking chicken breasts in a skillet with just that dressing! Yummy!

  2. This is one of my go to pasta salads. The various ingredients that you can add is endless. I have a version that I quickly make with cheddar cheese, chicken, broccoli florets, cauliflower florets, etc.

  3. I make a pasta salad for lunch weekly for meal preps. I try to switch up what kind of pasta salad I make every week, and I will absolutely be using this for my meals next week!! Thanks for the tip on blanching the broccoli too! ❤

  4. We do a similar salad but use spaghetti noodles. It causes heart burn but no one ever says no lol
