I so much enjoy your content. I was stationed in the Puglia region in the 80s and early 90s at San Vito Dei Normanni and miss my time in Italy. You bring back so many memories with your content. I stayed in trouble with the US Air Force for my weight while stationed there. 😂

Love all your videos!!! Anyway, the little "crunchy" bits in the aged Parmigiano Reggiano are proteins that form as the cheese ages.

If you eat cheese it has 2 different tastes. If you cut the cheese into slices with a knife it will taste a little bit different then if you grade it with a cheese grader.
