I want rich, sweet sauce bringing out all the natural sugars in the tomatoes while mellowing the acidity and caramelization/browning of the meats for that depth for that kinda “gravy” sauce as the Italian Americans say. Cook Olive oil in a stock pot, Onions and Carrots cooked down,
added Garlic, then Tomato paste cooked until sticky. Deglazed with the red wine, reducing again and then the chicken stock. Added the tomato sauce jars, Dry spices/seasoning – Oregano, Pepper, Onion and Garlic powder and then the spicy Italian sausages cut in half. Made the Meatballs, bread crumbs, salt, pepper, fresh basil, beef stock concentrate, 2 eggs w dry Parmesan cheese as a binder. Roasted in the oven at 500f to brown and solidify. All pan
drippings and meatballs added to the
pot to simmer in the sauce. Sauce left to
simmer 5-6 hours, occasionally stirred and the lid cracked to reduce. Meat removed into a serving pan, topped with the sauce to keep warm.
