COUNTRYSIDE CHICKEN WITH WHITE WINE – RECIPE
Prep Time: 20 mins
Cook Time: 120 mins
Complexity: Medium
Ingredients (4 people):
4 chicken marylands
500ml / 17oz of white whine
a handful of flour
a few onions
1 small carrot
1 piece of celery
A few Bay leaves
Italian herbs (rosemary, sage, parsley)
Extra-virgin olive oil
Salt and Pepper
Procedure:
1) Finely chop the Italian herbs and mix them with the flour;
2) Pass each chicken maryland in the flour+herbs mix and then quickly fry them in a pan with olive oil;
3) After a couple of minutes in the oil, take them out – we’ll use them shortly;
4) In a large pot, pour some olive oil, add some roughly chopped onions, the carrot cut in circles and the chopped celery – leave to gently fry (make ‘soffritto’);
5) After a few minutes, add the chicken maryland – keep cooking and stirring;
6) Add the white wine and keep stirring. Cook at low heat for a couple of hours, or until the chicken is fully cooked also in the areas around the bones. Add salt as required;
7) When the meat is ready, you can choose to create a glaze with the juice in the pan (by adding a bit of flour) or leave the juice a bit more liquid;
8) ENJOY!
