This is really a commercial for Eggology. What a shame to use a baby so deceptively as if this were a genuine home video.
Please, do not say that is italian. I am italian and that is NOT a frittata.
For starters you use WHOLE eggs. You DO NOT use ricotta. NO milk. You DO NOT cover it, but rather turn it over to cook both sides and DO NOT sprinkle anything on top.
Okay this is exciting, you should try potatoes and goat cheese and lots of it….

Wrong – the whites are almost completely pure protein. The yolks contain all the fat, and fat-soluable vitamins. By taking the yolk out, you take out all the fat, leaving just the protein. Obviously you also lose the vitamins but most people get plenty of these anyway from other places. Conclusion – egg whites are very healthy. A whole egg is about 80 calories, by taking out the yolk, you reduce this to 20. And keep all the protein.
