If you don't like the skins, use a blender (immersion or standing) and blend it smooth, back in pan, add noodles. It will be soooo silky from the skins being blended in.
That so much easier than the way I make sauce from scratch which is why I don’t do it often. I’m too lazy! Definitely gonna Tetris though. Thanks so much 💜
You don't even need the onion. Adding that unnessary time chopping an onion when you can get great flavour from just the tomatos, olive oil, basil and garlic is a waste lf time

I use canned tomatoes for price and convenience! Plus my husband can't stand cherry tomatoes lol

Good pasta sauce has to ferment for a little bit, doing it like you do is fine, but neither the cheapest, quickest or most tasty way to do it.

If you add a bit of the pasta water and reduce it, the consistency becomes even better

When I made this it didn't turn out great but I think adding tomato paste and more seasoning would add enough flavor and acid to the mix to be good

Best tomatoes I've ever eaten, my favorite variety to grow, they just keep fruiting almost until the cold kills them.
