  1. I live a mile from a large, local cheese factory and went in to buy plain curd. I learned, though, that one has to ask for the right kind of curd! They have a cheddar curd AND they have a "mozzarella" curd for making fresh mozzarella cheese. I almost made a mistake. Had I not mentioned to the girl what I was going to be making, I'd have had the WRONG plain curd…so you'll want to be sure to specify when buying the curd. Just sharing the tip…Going to make fresh mozzarella today…
