These eggplant timbales are always a hit with sausage lovers. The mozzarella cheese centre is always a nice surprise for guests and gives it the meat a nice creamy taste.
I used Italian style sausages which are pork and herbs but you could use any pork sausage. The grilled eggplant gives it a great smoky flavour and looks impressive once plated. Serve it with your favourite marinara sauce. This recipe is for four serves, I made double the quantity, so don’t be confused if you see eight in the video. Bon appetit!
