Nicola Fanetti and Ursula Waltermath run the modern Italian restaurant Brace in the heart of Copenhagen. Inspired by the New Nordic movement, specifically the time spent working at Noma and rediscovering his love for foraging and connecting with the nature, chef Fanetti decided to stay in Denmark and combine the Nordic influence with his Italian roots. His menu features neither pizza nor a lot of pasta, but all dishes point back to his motherland in some way or another. To the time spent at his grandparents’ farm as a kid, where he first learned how to cook and fell in love with food and Italian cuisine.
