1 lb. pappardelle pasta – cooked “al dente” firm to the bite
1/2 cup extra virgin olive oil
4 ounces butter
2 tablespoons dry minced garlic
1 tablespoon crushed red pepper
1/2 teaspoon anchovy paste
8 ounces pasta water
1 cup grated Pecorino Romano cheese
1/4 cup Italian parsley – chopped
to taste – sea salt & fresh ground pepper
