This famous Italian soup is rich in vegetable and strong with tomato flavor. Definitely hearty enough for dinner! It’s the perfect meal for a cold winter day.

Ingredients-4 servings
1. Olive oil (4 tbsp)
2. Onion-1 (medium)
3. Carrot- 1 (2.5 oz)
4. Celery-1 (2 oz)
5. Hard vegetables- 1 ½ cups
Such as potatoes, winter squash or turnips (choose one of those)
6. Garlics-chopped 2 tbsp (4 cloves)
7. Tomatoes-1 cup
8. Tomato paste ¼ cup
9. Vegetable stock-4 cups
10. Water-2 cups
11. Lemon juice-2 tsp
12. Soft vegetables- 1 ½-2 cups
Such as green beans, summer squash or diced zucchini
13. Bay leaves-2
14. Small pasta- 1 cup (Orecchiette, Macaroni, Elbow…)
15. Vegetable Bouillons-2 tbsp
16. Salt & pepper
17. Parmesan cheese (Some, based on your taste)
18. Leafy green ½ pound
Such as kale, spinach

How to make minestrone soup
Cook small pasta in a separate saucepan according to package instruction, drain and set it aside.
1. Heat oil over medium heat.
2. Add onions, carrot and celery
3. Sprinkle with salt and pepper and cook until veg. become soft (3-5mins)
4. Add hard veg. and garlics and cook for 1-2 mins
5. Add tomatoes and cook until tomatoes become dry
6. Add stock, water, then bring to boil, then lower heat to shimmer
7. Cook for 10-15 mins until potatoes becomes soft and tomatoes break down.
8. Add soft veg. if you are adding
9. Add leafy green 2 mins after adding soft veg.
10. Adjust to seasonings
11. Add parmesan cheese
12. Serve with pasta
