It is a quick excerpt from the cooking class we took in Florence Italy at Enoteca Vigna Nuova. We made tiramisu, fresh pasta (tagliatelle, pappardelle, tortelli), and Gnocchi. It was a fantastic class, with a small group, wine, good food, and a lot of fun. Chef Valentino and Gabriele were amazing.

Recipe is as below:
FILLING (same as Gnocchi, adding tomato and garlic sauce)
400g potatoes
-100g Wheat flour
-olio EVO to taste
– salt to taste
– 150g tomato sauce
– 2 cloves of garlic
Wash your potatoes and boil them for about 40 minutes. Let them cool down at room temperature and peel when the potatoes are still warm.
Mash your potatoes and mix everything with flour.
Put some EVO oil in a flat pan, let the oil slowly heat and add garlic. Once your garlic is browned add tomato sauce or fresh tomatoes and cook for about 15 min at low heat.
