  2. I am very sorry Andrew but this Tiramisu almost had me in tears.
    Mostly because the best thing about a Tiramisu I think should be the amount of Cream!
    The ratio here was probably the opposite I think it should be.

  3. Old traditions tip: use more yolk eggs than whites (3 : 2 or 2 :1 ratio), have a really solid and clear yellow whipped yolk+sugar before adding the mascarpone. Also soak both sides of the ladyfingers with more intense but COLD coffee, as from percolator/espresso/instant. It gives a stronger bitterness contrast without soaking it too much.

    to keep the air in the foam while adding the whites, our grandmas teach us to always stir in the same direction (clkw/anti)…not sure that's relevant though XD …everything else is pretty freaking accurate! love your videos!

Fun fact about the mocca master.. many Dutch households used to have one as you can get the machine easily collecting stamps with coffee..the Dutch being the largest consumers per capita of coffee. the most mundane/common coffee machine for us is one of the best filter machines in the world. They lost their attraction when espresso and Starbucks coffee became popular…still use my mocca master though!

  8. Hey babish, with the growing price of most food ingredients at the store, what do you recommend as meals that are still cheap, easy, and filling to make for us out there that are struggling to make the ends meet?

  9. There is many variations I guess, but this isn't classic recipe. Only mascarpone, egg yolks and sugar in creme. Also you need to soak your lady fingers more :=)

  10. I come from the region where the tiramisu was invented and i approve of this recipe. Only thing I must complain is that there's not enough cream, the ratio doesn't seem rich enough.

  11. Should bake the lady fingers so they snap and not bend and the should soak them outside of the baking dish

  12. My wife really likes coffee and wants all the fancy equipment, probably will end up getting a espresso machine eventually
