Tuscany offers wonderful examples of huge Porcini Mushrooms. Here we show how to prepare in few minutes an original Italian risotto with only vegan ingredients. Our unique mushroom was around 760 grams. Once cut any fragrance in it contained was released to join to the rice in this ancient and lucky marriage.
