We always have a batch of marinara in the fridge as you can serve with any kind of pasta, gnocchi, use it on pizzas and add to many other dishes. It’s so quick and easy to make and is most importantly delicious. • 3 x small cans of good quality tomatoes (my preference are San Marzano)⠀
• 1/2 white onion sliced thinly (optional but I like it as it adds sweetness)⠀
• 2 garlic cloves peeled and sliced in half • a few fresh basil leaves⠀
• a pinch of dried oregano ⠀
• olive oil ⠀
• salt ⠀
⠀ – Warm the olive oil in a large frying pan over a medium heat. Add garlic and onions and cook until the onions are soft (but not browned like mine!)⠀

– Add the tomatoes to the pan and gently crush with a fork. ⠀

– Stir in the oregano, and basil and season with salt. ⠀

– Simmer until the tomatoes have thickened and sweetened, about 25 minutes. ⠀

This sauce can be prepared and then either refrigerated or frozen! ⠀

  5. Stanley, I’m a big fan however I’m a little disappointed. The sauce you talking about does not even exist in Italy let alone the name.
    Also, you may wanna know the in Italy we never use garlic and onion in the same recipe. this is something that Italian Americans do along with the excessive use of garlic as Italian Americans do in New York. Need to leave, they use of garlic is very sparse and you don’t ever eat it if anything you just cook it a little bit till it browns and then you take it out.
    Just thought you would like to know. That said, I’m a very big fan. 😊

  8. You definitely, come from a Calabrian background as both my parents were also from Calabria, and my mother always used this recipe, which I have used for over 50 years.
