What kind of insecure Italian-American needs to have Columbus Day when every day is "San Pasquale Day"? We don't need moldy old Columbus when there are living saints like this guy. I would rather have this respectful Nonno from my country to represent me than some maniac mangiapolenta from 500 years ago. (My heritage is Nablodan and Bazligat and Galabreze, definitely not Genovese, so Columbus can go s**t in the ocean and let the waves clean his butt lol)

Pasquale, my grandmother on my maternal side was from Santa Maria Vicco in Caserta. My mother learned all of her cooking from her. Growing up we never had this dish with mozzarella. I really believe it's an American dish with that. I still love it the old way with Parmesan. We peel and salt our eggplant before frying but utilize the same methods otherwise Thank you for posting and all of your recipes. Saluta chin chin!

With men in the house, Everytime I fry up Eggplant to make eggplant parmigiano it never makes it to the end! They come into the kitchen they eat the fried eggplant while my back is turned. 😍
As always you do not address the issues that arise from these recipes. How do you avoid the bitterness of the Eggplant?
