One thing that strikes you when you walk into the Jewish Ghetto in Rome is the enormous amount of restaurants. Kosher restaurants that serve the so-called Giudaico Romanescho, the Jewish-Roman cuisine. Restaurants where it’s very hard to get a table. So they must be very good. But what is it, that makes this Jewish Roman cuisine so special?

Not only in Rome, especially in Sicily, Palermo area, we still have many many dishes from jewish/arab history. When Sicily was a Norman Kingdom Palermo was a peaceful place for Arabs, Jews and Christians of Greek and Latin Ritus. Many many Jews and Arabs lived in Palermo. And until now our Sicilians cuisin is more like the Jewish/Arab.
