This is my favorite way of preparing a beef stew. The flavors are incredible!
Ingredients:
3 pounds beef stew meat (round is leaner, but chuck is more flavorful)
3-4 cups dry red wine to marinate beef (chianti, cabernet or zinfandel)
4-5 tablespoons all purpose flour
4 ounces prosciutto, small dice
4 tablespoons extra virgin olive oil
2 onions, diced
4 carrots, peeled and cut in 2″ chunks
1 or 2 celery stalks, cut in 2″ chunks
3 garlic cloves, minced fine
1 or 2 bay leaves
2-3 tablespoons dry oregano
kosher or sea salt
freshly ground black pepper
3-4 tablespoons tomato paste
