Welcome to Wine travel Umbria, Italy – Pt. 2 of an interview w/ Massimiliano Pasquini of Castello della Sala – another episode of “On The Road Edition” hosted by Stevie Kim. In this second part of her interview, Stevie continues her conversation with Castello della Sala’s Massimiliano Pasquini, General Manager of the winery; part of the Antinori estates. Together they explore the wines, the process and ofcourse the history of the estate!
Castello della Sala is located in Umbria, near the Tuscan border, and it’s a magnificent medieval manor house with 600 hectares of land, 200 of which are vineyards. Built in 1350 the estate was bought in 1940 by Marchese Niccolò Antinori who wanted to develop the great potential for producing white wines. In 1979 the agronomist Renzo Cotarella joined Castello della Sala with an ambitious project to make a white wine able to age and improve over time. After several years the 1985 vintage produced the first true Cervaro della Sala one of the first Italian wines that underwent malolactic fermentation and aging in barriques.
