ASPARAGUS IN SEASON!!!!!!

Ingredients:

2 bunches asparagus

2 tomatoes diced

1 shallot or half red onion

¼ bunch parsley or basil

Olive oil, salt and pepper to taste

Juice of half lemon

Instructions:

Prep asparagus snapping the woody part. Place them on a baking tray with olive oil salt and paper and bake for 10 min at 160 degrees.

For the salsa:

Dice tomatoes and onions and add to a mixing bowl. Discard the tomato seed as they leave the salsa watery.

Dice onion and parsley and add to the mixing bowl.

Season with lemon, salt pepper and olive oil to taste and serve on top of the baked asparagus.
