This is my version of arancini.

I KNOW It is not the original recipe and that was not my goal. Call It fried rice ball if you prefer.

In this version I was looking for a fresh and clean taste, adding lemon zest and parsely in the rice. Finishing with a smokey note thanks to the smoked provola cheese.
