8 oz fresh handmade garganelli
2 TBS extra virgin olive oil
¼ cup yellow onion, minced
½ lb Italian sausage, no fennel, off the casing
1/3 cup dry white wine
½ cup grated Parmigiano Reggiano, 24 moths aged
2 TBS butter
TT Salt and black pepper
Place a pot of water to boil, cook pasta according to directions. Meanwhile in a skillet sweat onion with olive oil for three minutes, add sausage and brown well, about five minutes. Deglaze with wine, reduce to 1/3 and then add ½ cup of pasta cooking water, keep simmering for few minutes. Drain garganelli and toss with sausage.
