Place a pot of water to boil, cook pasta according to directions. Meanwhile in a skillet sauté garlic with olvie oil, add za’atar, red pepper flakes and soon after mushrooms. Cook for several minutes until musrooms are starting to get brown, then stir in 2 cups of pasta cooking water. Keep cooking at high heat for 3-4 minutes. Mix yolks to cheese, season with salt and add 1/3 cup of pasta cooking water to loosen up the mixtureDrain pasta slightly undercooked and toss with mushroom mixture off the fire.
