In this video I will show you how to make the perfect artichoke tart with a pizza dough base and a delicious filling of fresh cheese, tuna, parsley and lemon.

I followed exactly his recipe, with two little exception. The first exception makes a big difference: a healthy pinch of sugar added in the warm water and yeast mixture adds softness and elasticity to the dough and makes its taste even better. The second one was that I added the full amount of yeast instead of halving it because I really wanted my dough to fluff up.
Ingredients:
For the dough:
250g flour
5g salt
160ml warm water
7g yeast
10g sugar
drizzle of olive oil (to coat the bowl)
For the filling:
250g fresh cheese
200ml heavy cream
1 bunch of parsley (about 10-15 stems)
160g canned tuna (use the oil in the cans as well)
1 tbs olive oil
1 pinch of salt
crack of black pepper
about 200-250g of chopped artichokes
2 tsp lemon zest
For decoration:
a few halved artichokes (I used 4)
a few capers
lemon zest
Pair this artichoke tart with a refreshing Italian wine, such as Rivera’s Castel del Monte, a lovely rose from the Pugliese region in the south of the country.
