1. Parmigiano Reggiano can only be produced in five regions in Italy for it to be called that name.
2. Each wheel is individually tested with a hammer to check for quality.
3. Depending on quality, the cheese can either remain aging, sell immediately, or be sold as fresh cheese which is different from Parmigiano Reggiano.
