After so many experiments, I am sharing with you what I think is the perfect recipe for fried squash flowers! for taste, texture and lightness! It is a very easy and quick preparation. The batter is made in 5 minutes. The secret for a perfect result after gently dipping the courgette flowers in batter without breaking them; a state of the art frying, a few pieces at a time in boiling oil at a constant temperature! In this way they will be without excess oil, super crunchy and golden! From this basic version, you can also decide to stuff them with ricotta and mozzarella before frying them! they will be a marvel!
