INGREDIENTS
200 g of roasted pepper
290 ml whole milk
87 g cream 30%
20 ml low-fat milk powder
4.5 g seed flour
100 g trehalose
28 gr dextrose
For the tartare:
20 g pepper ice cream
20 g onion
5 g Parsley
140 g beef
1 yolk
Mayonnaise to taste
Salt to taste
Extra virgin olive oil to taste
Sprouts amaranth and nasturtium
Pour the milk in a saucepan. Pour all the powders and let them dissolve. Bring everything to 104°F (40°C) and add the cream. Let it boil (at about 175°F (80-82°C)), and pour the mixture into a very cold bowl.
Transfer the mixture to the fridge for 6-8h for the product to cool. Once ready, combine it with the roasted pepper puree and transfer it to the ice cream maker.
