Ingredients:
2 cups cooked wheat berries (I like these from Bob’s Red Mill)
3 roasted red peppers, diced
1 small bunch of fresh basil, julienne
salt and pepper to taste
juice from one lemon
1 tablespoon red wine vinegar
2 tablespoon olive oil
1/2 teaspoon dried oregano

Directions:
Combine wheat berries with roasted peppers, garbanzo beans and basil.
Season with salt and pepper. Dress with lemon, red wine vinegar, olive oil and dried oregano.
Toss to combine and let refrigerate for an hour before serving. Taste for salt and pepper and adjust.
